Rhubarb is no slouch when it comes to health benefits. This is thanks to the high number of antioxidants called anthocyanins (hence its beautiful red color). It gets its sour taste from high levels of malic and oxalic acid (you might want to watch out if you are prone to kidney stones). This sour veggie is often combined with a sweeter fruit like strawberries to help balance that sweetness and add some complexity and depth of flavor. This strawberry rhubarb ice cream recipe is a super-quick and easy way to combine sweet and sour into a delicious frozen treat while giving you a healthy boost of polyphenols and fiber.

And if you missed it, this recipe was featured in our July 2021 recipe cookoff video, going up against our Mint Chocolate Chip ice cream!
