This roasted radish recipe can convert even the most avid radish hater into a fan. When cooked, radishes lose their spiciness and get considerably milder and sweeter. This can make these low-calorie, low-carb little jewels a great replacement for carb-heavy, high-glycemic potatoes. And no, they don’t taste exactly like potatoes when they’re cooked, but they are very similar. If you’re craving a side of potatoes with your next meal, give these quick and easy roasted radishes a try. You just might fall in love!

Serves: 1

Prep time: 5 minutes
Cook time: 20 minutes

2 cups halved radishes
Fresh or dried Italian seasonings
1 TBSP olive oil
Sea salt and black pepper, to taste

  1. Preheat the oven to 400°F.
  2. Toss all ingredients together in a medium bowl, making sure to coat all the radishes with the oil and seasonings.
  3. Place the radishes on a greased cookie sheet and bake for 15-20 minutes, or until tender and golden.

Try adding some minced garlic cloves or other spices like rosemary.

If you don’t want to use the oven, these roasted radishes also turn out great in an air fryer. Simply cook at 400°F for about 18 minutes. Be sure to shake the basket, or give them a stir, halfway through cooking.
